Low-carb Christmas Cookies
Cookies are a staple of the holiday season! Events such as cookie decorating parties and recipe exchanges are a tradition for many. But for our family and many others who follow the Paleo lifestyle, participating in these activities weren’t always an option. It isn’t easy finding an alternative to these confections that also pack a sweet punch and are fun to make. Then this recipe came to our rescue! Even after adapting it to our tastes and food restrictions, they still came out delicious! These mouth-watering, golden-brown cookies are a perfect treat. One of our favorite activities is forming the dough into all kinds of festive designs and embellishments while watching a Christmas movie together. Want to add toppings instead? Try healthy options like raisins, organic chocolate chips or coconut butter as icing. Yum!
Low-carb Christmas Cookies
2 c almond flour (the finer, the better)
1 Tbs cinnamon
1 1/2 tsp ginger
1/4 tsp ground cloves
1/2 tsp baking powder (gluten and aluminum-free)
1/4 to 1/2 tsp liquid monk fruit, depending on desired sweetness (erythritol-free)
1/4 c butter (organic, grass-fed is best!)
1 egg
1 tsp vanilla extract
Stir together all dry ingredients in a medium sized bowl. Using a separate bowl and hand mixer or a food processor, beat the butter and monk fruit for a couple of minutes until soft and looking a bit fluffy. Add the egg and vanilla and continue processing/beating. Lastly, add the dry ingredient mixture and beat until a dough forms. Shape the dough into a ball and refrigerate for at least 30 minutes. This will harden the dough and make it easier to work with. When you are ready to bake, preheat the oven to 350° and line a cookie sheet with parchment paper. The dough will be a bit sticky, so placing it between two large sheets of parchment paper will help with the rolling process. Roll it out to 1/4 to 1/2 in thickness. It is now ready for your artistic flair! We use cookie cutters, but also free-hand designs using a plastic knife. You are only limited by your creativity! Re-form remaining dough into a ball, roll again and repeat until all the dough has been used. Bake for 10 - 15 minutes until golden. If using frosting, wait until cookies have cooled to decorate.
